[DOCS] Update Transaction Flow Page

Description

The transaction flow page has some out-of-date information, such a referencing L2OO and compression ratio config variable. We could also go into more detail with the page, and include the diagram from the specs

Acceptance criteria

Reviewed and accepted by Zak and either George or Seb

User stories

A user should be able to understand the lifecycle of a transaction as it is sent to the sequencer, batched, posted, and read by replica nodes. This should include the most up-to-date information on op stack components.

Resources and support

• Zak Ayesh: I have been working on config guides for the batcher that we can use to inform this page.
• Seb and George: Engineers updating and maintaining the batcher, which is a crucial component in this process.
