[Docs]: IIS needs additional MIME Types specified

Description

In order to get Evidence working under IIS, I needed to add MIME Types for a few additional file types in addition to the already mentioned .arrow and .arrows ones.

• .parquet --> application/vnd.apache.parquet
• .webmanifest --> application/manifest+json

The .parquet one is especially important since otherwise, while pages may load with their initial content, if you have a dropdown filter, making changes will cause charts, etc. to fail.
