chore: Tidy the CHANGELOG.md

- Check "(scopes)" wrt. CONTRIBUTING.md, in particular, "(CI)" had to be changed
- Move items around to only put relevant items in Features and Bug-Fixes
- Drop "bump version to 1.1.0", as it had to get prefix "chore", then be skipped
