Fix rustdoc warnings

There are some warnings when you run cargo doc --workspace mainly related to url links and missing <>, etc.

I don't think there's much additional context necessary: we just want to follow whatever cargo doc --workspace suggests to ensure the docs work properly.

I've read the Contributor's Docs but found nothing about it there.

We are pretty laid back about format, as long as you make a PR off of main and explain in the PR description what you're doing, that's good enough :)
