If so there is a working OpenIddict-based sample https://github.com/Ecierge/openiddict-core/tree/apple-cryptokit/sandbox that provides this functionality for iOS and MacCatalyst.
It imports Apple CryptoKit and allows generating of RSA keys required for PKCE.

This is a fairly new API, but it's a WinAppSDK one that we'll likely implement. There's no timeline for it yet.
