Update bundled Cocoa SDK to version 7.31.4.
Also updates bindings to use named delegates, taking advantage of workaround described in dotnet/macios#15299 (comment)
Note: Return type nullability is still not correct for
SentryBeforeBreadcrumbCallback,SentryBeforeSendEventCallback, andSentryTracesSamplerCallback. Waiting on dotnet/macios#17109 to fix that.Also adds missing binding for
PrivateSentrySdkOnly.CaptureScreenshotsadded in 7.31.1. We might use that when we get to #1935.
